No-Bake Frozen Birthday Cake Banana Bites

I’ll be honest: birthday cake anything is my favorite flavor. 🎂 But I don’t go for it too often since most birthday cake flavored things lean hard on artificial flavoring to get there, which isn’t my thing on a regular basis. The trick I keep coming back to is cashew butter plus almond extract. Together they give you that unmistakable birthday cake vibe without anything artificial, and the cashew butter brings a creamy, mild sweetness that works perfectly as a “batter” base.

These No-Bake Frozen Birthday Cake Banana Bites are a sweet treat and a balanced snack at the same time (while being kid friendly too!), which is my favorite kind of recipe. They’ve got very little added sugar and plenty of healthy fats and protein from the cashew butter, almond flour, yogurt, and hemp seeds, so they’re blood sugar friendly rather than a quick spike and crash.

Ingredients for No-Bake Frozen Birthday Cake Banana Bites (makes 18 bites)

Cake Batter Base

  • 1/3 cup cashew butter
  • 4 Tbsp almond flour
  • 1/2 tsp almond extract
  • 1 Tbsp maple syrup

To Assemble

  • 1 banana, sliced
  • 5 oz vanilla yogurt
  • Sprinkles
  • Hemp seeds

Instructions for No-Bake Frozen Birthday Cake Banana Bites

  1. In a bowl, mix together the cake batter base ingredients: cashew butter, almond flour, almond extract, and maple syrup. If your cashew butter is on the thicker side, add a little more maple syrup or liquid until it comes together. Mine was pretty runny to start.
  2. Dollop about 1 tsp of the batter mixture into each cavity of a mini muffin tin (I use silicone for easy removal). Top each with a banana slice.
  3. Cover with 1–2 tsp vanilla yogurt. Tap the pan on the counter to help everything settle and flatten out.
  4. Sprinkle with hemp seeds and sprinkles.
  5. Freeze until solid (2-4 hours minimum), then pop them out and enjoy. (Let sit at room temperature for 2–3 minutes to soften slightly before eating.)
