Healthy Zucchini Banana Bread with Whole Wheat Flour

I never want to forget the moment my 3-year-old daughter woke up from her nap right after I baked this Healthy Zucchini Banana Bread. I went up to get her from bed with a warm slice in a bowl, and told her what it was. “Zucchini bread?” She scrunched up her nose. But the pat of butter melting on top was calling her name, so she took a bite anyway, and the wide-eyed joy that lit up her face when she tasted that slight sweetness and moisture literally melted my heart.

Little moments like those is exactly why I make food this way. It’s not about hiding the vegetables, it’s about showing my kids there are so many delicious ways to enjoy them.

This loaf is low in added sugar (just 5 g per slice), naturally moist from the banana and zucchini, and honestly tasty as all get out with a little butter. It’s easily made plant-based with a flax egg, and it’s become our go-to for wake-up snacks, lunchbox treats, after-school bites, and slow mornings alike.

FAQs

Can I make this Healthy Zucchini Banana Bread plant-based?
Yes. Swap the egg for a flax egg (1 Tbsp ground flax + 3 Tbsp water) and use a dairy-free yogurt.

Do I need to peel the zucchini?
No. Just shred it and lightly squeeze out the excess moisture. The skin softens right into the bread.

Why squeeze the zucchini?
Zucchini holds a lot of water. Lightly squeezing it keeps the loaf moist without turning it soggy.

Can I use all whole wheat flour?
You can, though the texture will be a bit denser. The blend of whole wheat and all-purpose keeps it light while still adding fiber.

Can I add mix-ins?
Absolutely. Chopped walnuts, chocolate chips, or raisins would all be delicious folded into the batter.

Do the bananas need to be ripe?
The riper the better. Spotty, soft bananas add natural sweetness and moisture. At the very least, make sure they’re mostly yellow and not mostly green.
