Method
- Preheat oven to 350°F and grease or line a loaf pan.
- Mash the bananas in a large bowl, then whisk in the egg, avocado oil, Greek yogurt, maple syrup, and vanilla until combined. Fold in the zucchini.
- Add the whole wheat flour, all-purpose flour, cinnamon, baking powder, baking soda, and salt. Mix until just combined.
- Pour the batter into the prepared loaf pan and sprinkle with oats, if desired.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes, then slice and enjoy.

Storage tips
- Refrigerator: Store in an airtight container for up to 5 days.
- Freezer: Wrap slices individually and freeze for up to 3 months.
- Reheat: Microwave for 15–20 seconds or enjoy at room temperature, ideally with a pat of butter.
Recipe Notes
- The riper your bananas, the sweeter and more flavorful your loaf will be.
- A sprinkle of oats on top adds a nice bakery-style finish, but it's completely optional.
- This bread is even better the next day, once the flavors have had time to settle.
- Serve with a pat of butter for the full experience. My daughter approves.
