Apples have their own lore around my house, because we have a scraggly apple tree waaaaaay at the top of a rock pile in our backyard.   3. In a medium bowl, combine the wet ingredients: applesauce, egg, yogurt, avocado oil, maple syrup, and vanilla.
  4. Add the wet ingredients to the dry and blend together until just combined, being careful not to overmix. Fold in the shredded apple.
  5. Divide the batter evenly among the muffin cups and sprinkle the tops with cinnamon sugar. Bake for 13 minutes, or until a toothpick inserted in the center comes out clean.
