White Chocolate Peppermint Energy Bites (No Bake, High Protein)

These White Chocolate Peppermint Protein Bites taste like peppermint bark but are high in protein and made with real ingredients — perfect festive snack!

Ingredients
  

  • cup vanilla protein powder
  • cup oat flour
  • ¾ cup cashew butter
  • 2 Tbsp maple syrup
  • ¼ tsp peppermint extract
  • ¼ cup mini white chocolate chips divided
  • ¼ cup crushed candy canes divided

Method
 

  1. Mix the base: In a medium bowl, stir together the protein powder, oat flour, cashew butter, peppermint extract, and maple syrup until a thick dough forms.
  2. Add the mix-ins: Fold in half of the white chocolate chips and half of the crushed candy canes.
  3. Form the bites: Roll into about 16 1-inch balls.
  4. Top and chill: Melt the remaining white chocolate chips with 1 teaspoon neutral oil in the microwave until just melted. Drizzle on top of the bites and top with crushed candy canes.
  5. Store: Keep refrigerated in an airtight container for up to 1 week or freeze for up to 2 months.

Notes

  • If your dough feels dry, add a teaspoon of plant milk or extra cashew butter.
  • For a more pronounced mint flavor, increase the peppermint extract slightly — a little goes a long way!
  • Roll the bites in crushed candy canes for extra crunch and a festive look.
