Mix the base: In a medium bowl, stir together the protein powder, oat flour, cashew butter, peppermint extract, and maple syrup until a thick dough forms.
Add the mix-ins: Fold in half of the white chocolate chips and half of the crushed candy canes.
Form the bites: Roll into about 16 1-inch balls.
Top and chill: Melt the remaining white chocolate chips with 1 teaspoon neutral oil in the microwave until just melted. Drizzle on top of the bites and top with crushed candy canes.
