Method
- Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Add cooked rice and cook for 3–4 minutes, stirring occasionally.
- Add soy sauce and garlic powder and stir to coat the rice evenly.
- Push the rice to one side of the skillet. Add the remaining tablespoon of oil and scramble the eggs until just cooked.
- Stir in frozen vegetables and tofu. Cook for 2–3 minutes, tossing everything together until warmed through.
- Taste and add additional soy sauce if desired. Serve warm.

Easy Variations
This recipe is incredibly forgiving. Try- Broccoli, edamame, corn, spinach, or bell peppers instead of mixed vegetables
- Brown rice or quinoa instead of white rice
- Extra tofu for more protein
- A drizzle of sriracha or chili crisp for heat
- Green onions or sesame seeds for serving
