5-Ingredient Banana Bread Mini Muffins (Flourless & Gluten-Free)

Servings: 24 mini muffins

Ingredients
  

  • 3 bananas
  • 1/2 cup natural peanut butter
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips optional

Method
 

  1. Preheat oven – Set to 350°F. Line or grease a mini muffin tin (silicone works great).
  2. Make the batter – In a bowl, mash bananas well. Add eggs, peanut butter, baking powder, and vanilla. Mix until smooth.
  3. Add mix-ins – Fold in chocolate chips if using.
  4. Bake – Spoon about 1 Tbsp of batter into each mini muffin cup. Bake for 20 minutes.
  5. Cool & store – Let cool for 10 minutes in the pan before transferring to a rack. Store in the fridge for up to 3 days or freeze for up to 3 months.
