Ingredients

  • 4 oz dry ramen noodles or noodles of choice
  • 1 cup frozen edamame
  • 2 Tbsp green onions (optional) sliced
Sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic
  • ½ cup vegetable broth
  • 2 Tbsp tahini
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • 1/4 tsp ground ginger

Method

  1. Cook noodles according to package instructions. During the last minute, add edamame. Drain and set aside.
  2. Make the sauce: In the same pot, saute the garlic in sesame oil for about 1 minute. Add broth, tahini, rice vinegar, soy sauce and ginger, whisking until incorporated. Bring to a boil and allow to simmer for 2-3 minutes.
  3. Combine everything: Add the cooked noodles, edamame and green onions (if using) to the sauce. Toss to coat evenly and heat through. Serve immediately.

Notes

For more fiber and color, add a handful of shredded cabbage and saute for 2-3 minutes. Or serve with a side of steamed broccoli.
If you like spice, add some sriracha or a pinch of red pepper flakes.
